Overview

Wisconsin Style Barbecue, located at 28414 Wilmot Rd in Trevor, Wisconsin, offers a distinct take on classic American barbecue with a casual, inviting vibe. Though it operates primarily as a stationary food truck surrounded by several mobile trailers and a BBQ pit, the experience feels more like a community gathering spot than a transient eatery. This setup allows patrons to enjoy a variety of smoky, slow-cooked dishes in an open-air environment—a perfect match for locals and visitors seeking hearty flavors without the pretense of a formal restaurant.

The highlight here is undoubtedly the brisket, prepared with care and attention to quality. Multiple customers have raved about the beef brisket sandwich and the brisket meal, praising the tender, flavorful meat. The inclusion of different barbecue sauces, such as spicy and cherry, adds a customizable element to each dish, satisfying a broad range of taste preferences. The sauces themselves stand out as a testament to the brand’s dedication to authentic and bold flavors, with the spicy option earning particular acclaim from heat lovers.

Dishes like the mushroom gravy brisket sandwich showcase creative variations, though some customers noted room for improvement with texture. However, the more traditional offerings, such as the classic brisket sandwich, consistently receive high marks. The unexpected addition of a small dessert—often a brownie—is a welcome touch, rounding out the meal and enhancing the overall dining experience.

Wisconsin Style Barbecue caters well to outdoor enthusiasts, workers in the area, and festival-goers, making it a versatile choice for anyone craving quality barbecue in a laid-back setting. Whether you stumble upon it during a hike or spot it at a local event, the inviting atmosphere and communal layout make it easy to relax and savor the smoky dishes on offer.

The friendly, generous hospitality of the owner also contributes significantly to the experience, with some customers even receiving complimentary samples of the signature sauces. This genuine connection between the food and those who craft it amplifies the appeal, creating lasting impressions beyond just the meal.

In summary, Wisconsin Style Barbecue stands out for its flavorful brisket, variety of sauces, and approachable, rustic environment. It’s an ideal destination for anyone seeking classic barbecue with a Wisconsin twist—whether at the food truck’s home base or roaming at local festivals and events across the region.

It's a food truck that doesn't move..... well in reality it's more like te parking lot for 3-5 moving food trucks/trailers a BBQ pit on a trailer and a stationary food "truck". Try the walking tacos you won't be disappointed. Also several BBQ sauce flavors. If you can't make it Herr I'm sure you will find them at other festivals or parking lots in the area they do have multiple food trucks. (And I've seen them about at festivals too)

Stumbled across this food truck, delicious! Loved the little desert included with the meal. Perfect way to end a sight seeing hike in the area.

Aug 2021: Work for lawn company, happened to be in area, never heard of or seen this place before, passed by on way to customers. Thought about stopping but didn't initially. Then by chance I passed by again on way to another customer, so I stopped this time. Ordered the brisket samwhich and a Dr Pepper. For a random stop in an unfamiliar place I was very impressed. It was very great and I was super happy with my order. I only wish I had bought coleslaw aswell and put it on the samwhich but otherwise no complaints at all. Oct 2022 I stopped here again today and got the brisket meal, just as good as it was last time still very much impressed. shame and I can't get to this area more often to eat out here more often. Either way I was very impressed again with the sandwich, added the very hot barbecue sauce that they had in the counter there would recommend if you like spice. As I had mentioned previously kind of could use the coleslaw on the sandwich itself and yes it does need it and I had it that way today, yes good. Was not expecting a little brownie treat with the sandwich, nice little surprise. Left with a big grin on my face , thank you.

The beef brisket sandwich was nothing short of amazing. Meat was high quality and flavorful. The owner greeted us with big generosity and even gave me a free bottle of the sauce (also fantastic). I hope to see them around because I’ll definitely want to try their food again.

The mushroom gravy brisket sandwich was kind of squishy. Their BBQ sauces were delicious. They have cherry and spicy that are really amazing. I would definitely try a different sandwich next time.

The food is awesome if you like smoked pulled pork and brisket this is the place to stop at! The service was fast the food was hot they have their own bbq sauces so you can spice it up or sweeten up any way you like. I asked if we could have our company picnic there and they were so helpful and accommodating. This is a food truck business and a great one at that.

The pulled pork sandwich is good. Personally I'm not a fan of the coleslaw. The walking taco is worth it, we are glad that the serving size is larger this year. The BBQ sauce is pretty tasty I enjoyed the spicy BBQ.
